Ingredients
  

For the Cauliflower

  • 1 medium head cauliflower, cut into bite-sized florets
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cold water or unsweetened milk
  • 1 tablespoon neutral cooking oil

For the Gochujang Sauce

  • 2 tablespoons gochujang
  • 1½ tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, finely minced

For Garnishing

  • 1 tablespoon toasted sesame seeds
  • 2 scallions, thinly sliced
  • Korean chili flakes, optional

Instructions
 

Prepare the Cauliflower

  • Wash the cauliflower thoroughly and dry it well.
    Cut it into evenly sized, bite-sized florets.
    Try to keep the pieces similar in size so they cook evenly.

Prepare the Coating

  • In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, salt, and black pepper.
    Mix well.

Make the Batter

  • Gradually add the cold water or milk to the dry ingredients.
    Whisk until a smooth, moderately thick batter forms.
    The batter should coat the cauliflower without becoming excessively heavy.

Coat the Cauliflower

  • Add the cauliflower florets to the batter.
    Gently toss until every piece is evenly coated.
    Allow any excess batter to drip away.

Preheat the Air Fryer

  • Preheat the air fryer to 375°F (190°C) for approximately 3–5 minutes, if your air fryer requires preheating.

Arrange the Cauliflower

  • Lightly grease the air fryer basket or use a suitable liner.
    Arrange the battered cauliflower in a single layer.
    Avoid overcrowding the basket.
    Cook in batches if necessary.

Air Fry

  • Lightly brush or spray the cauliflower with a small amount of neutral oil.
    Air fry for approximately 12–15 minutes.
    Shake the basket halfway through cooking

Prepare the Gochujang Sauce

  • While the cauliflower cooks, combine the gochujang, soy sauce, honey or maple syrup, rice vinegar, sesame oil, minced garlic, and water in a small saucepan.

Toss the Cauliflower

  • Transfer the hot, crispy cauliflower to a large mixing bowl.
    Pour the warm gochujang sauce over the cauliflower.
    Toss gently until every piece is evenly coated.

Garnish

  • Sprinkle the cauliflower bites with toasted sesame seeds and freshly sliced scallions.
    Add Korean chili flakes for extra heat if desired.

Serve Immediately
