  • 1 prepared pie crust (9-inch)
  • 1 bunch fresh asparagus (about 1 pound), trimmed and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded Gruyère or Swiss cheese
  • ½ cup grated Parmesan cheese
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ¼ teaspoon nutmeg (optional)
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Place the pie crust into a pie dish and set aside.
  • Cook the asparagus: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
  • Add asparagus: Stir in the asparagus pieces and cook for about 3–4 minutes until slightly tender. Remove from heat.
  • Prepare the filling: In a mixing bowl, whisk together eggs, cream, salt, pepper, and nutmeg.
  • Add cheese: Stir in Gruyère cheese and half of the Parmesan.
  • Assemble the pie: Spread the cooked asparagus mixture evenly over the pie crust.
  • Pour filling: Pour the egg mixture over the asparagus and sprinkle the remaining Parmesan on top.
  • Bake: Place in the oven and bake for 35–40 minutes until the center is set and the top is golden.
  • Cool slightly: Allow the pie to rest for 10 minutes before slicing. Garnish with fresh herbs.
