  • 12 oz pasta (spaghetti, fettuccine, or penne)
  • 1 cup ricotta cheese
  • 1 teaspoon turmeric powder
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup pasta cooking water
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh parsley or basil for garnish

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
  • Stir in turmeric powder and cook briefly to release its aroma.
  • Add ricotta cheese to the skillet and stir gently. Pour in a small amount of reserved pasta water to loosen the mixture.
  • Mix in grated Parmesan cheese and black pepper, stirring until the sauce becomes creamy and smooth.
  • Add the cooked pasta to the skillet and toss well so the pasta is coated evenly in the golden sauce.
  • Add more pasta water if needed to achieve a silky sauce.
  • Finish with lemon juice, fresh herbs, and extra Parmesan before serving.
