Ingredients
  

  • 1 pound fresh small okra pods
  • 2 cups white vinegar
  • 2 cups water
  • 2 tablespoons pickling salt
  • 4 garlic cloves, peeled
  • 2 teaspoons dill seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 4 fresh dill sprigs

Instructions
 

  • Wash the okra thoroughly and trim the stems without cutting into the pods.
  • Sterilize four pint-sized jars and lids.
  • Place garlic, dill seeds, mustard seeds, peppercorns, and dill sprigs into each jar.
  • Pack the okra vertically into the jars.
  • In a saucepan, combine vinegar, water, and pickling salt.
  • Bring the brine to a boil, stirring until the salt dissolves.
  • Carefully pour the hot brine over the okra, leaving ½ inch headspace.
  • Remove air bubbles and wipe jar rims clean.
  • Seal jars with lids.
  • Process in a boiling water bath for 10 minutes if canning for long-term storage.
  • Allow jars to cool completely.
  • Refrigerate and let pickle for at least 7 days before serving.
