- 1 whole chicken (about 4 lbs)
- 8 cups water
- 1 large onion, chopped
- 3 cloves garlic, mincedx
- 3 celery stalks, sliced

- 2 tbsp olive oil
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Prepare the Broth: In a large pot, place the whole chicken and cover with water. Add bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer. Cook for 40 minutes or until the chicken is tender. Shred the Chicken: Remove the chicken from the pot and let it cool. Strain the broth and set aside. Shred the chicken, discarding skin and bones. Sauté Vegetables:In the same pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Cook until softened. Combine Ingredients: Pour the reserved broth back into the pot. Add shredded chicken and bring to a gentle boil. Cook the Noodles: Add egg noodles and cook according to package instructions, about 8-10 minutes. Season and Serve: Taste the soup and adjust seasoning if needed. Garnish with fresh parsley before serving.
