Ingredients
  

  • 1 whole chicken (about 4 lbs)
  • 8 cups water
  • 1 large onion, chopped
  • 3 cloves garlic, mincedx
  • 3 celery stalks, sliced
  • 3 celery stalks, sliced
  • 2 cups egg noodles
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Prepare the Broth:
    In a large pot, place the whole chicken and cover with water. Add bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer. Cook for 40 minutes or until the chicken is tender.
  • Shred the Chicken:
    Remove the chicken from the pot and let it cool. Strain the broth and set aside. Shred the chicken, discarding skin and bones.
  • Sauté Vegetables:
    In the same pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Cook until softened.
  • Combine Ingredients:
    Pour the reserved broth back into the pot. Add shredded chicken and bring to a gentle boil.
  • Cook the Noodles:
    Add egg noodles and cook according to package instructions, about 8-10 minutes.
  • Season and Serve:
    Taste the soup and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • For a richer broth, roast the chicken before boiling it.
  • Use store-bought rotisserie chicken for a quicker version.
