  • 1 1/2 cup all-purpose flour
  • 1/2 tbsp salt
  • 1/2 cup unsalted butter
  • 6 tbsp ice water
  • 2 mashed mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1 tbsp vanilla extract
  • 1/2 tbsp ground cinnamon
  • 1/4 tbsp ground nutmeg

Instructions
 

  • Prepare the Pie Crust:
    In a large mixing bowl, combine the all-purpose flour and salt.
    Add the cold, cubed butter to the flour mixture.
    Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
    Gradually add the ice water, 1 tablespoon at a time, mixing with a fork, until the dough comes together.
    Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the Oven:
    Preheat your oven to 375°F (190°C).
  • Roll out the Pie Crust:
    On a lightly floured surface, roll out the chilled pie dough into a circle large enough to fit into a 9-inch pie dish.
    Carefully transfer the rolled-out dough to the pie dish, gently pressing it into the bottom and sides. Trim any excess dough and crimp the edges as desired.
  • Prepare the Sweet Potato Filling:
    In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, beaten eggs, evaporated milk, melted butter, vanilla extract, ground cinnamon, ground nutmeg, and salt.
    Mix until well combined and smooth.
  • Assemble the Pie:
    Pour the sweet potato filling into the prepared pie crust, smoothing the top with a spatula.
    Optionally, sprinkle a little extra cinnamon on top for added flavor.
  • Bake the Pie:
    Place the pie in the preheated oven and bake for 45 to 50 minutes, or until the filling is set and the crust is golden brown.
