  • 2 cups rolled oats

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup coconut oil or softened butter
  • ½ cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup peanut butter or almond butter
  • ½ cup dried cranberries or raisins
  • ½ cup chopped walnuts or almonds
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseed

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, granola, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk together coconut oil, honey, eggs, vanilla extract, and peanut butter.
  • Pour the wet mixture into the dry ingredients.
  • Mix gently until combined.
  • Fold in dried fruit, nuts, chia seeds, and flaxseed.
  • Let the dough rest for 10 minutes to allow the oats to absorb moisture.
  • Scoop tablespoon-sized portions onto the prepared baking sheet.
  • Flatten each cookie slightly with the back of a spoon.
  • Cool on the baking sheet for 10 minutes before serving.
