Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup Greek yogurt
  • 1 clove garlic, minced
  • 1/2 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1 cup cooked rice or quinoa
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Marinate the chicken: In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, black pepper, and paprika. Coat the chicken and let it marinate for at least 15 minutes (or up to 24 hours for deeper flavor).
  • Cook the chicken: Heat a grill pan or skillet over medium heat. Cook the chicken for about 6-7 minutes per side until fully cooked. Let it rest for 10 minutes before slicing.
  • Prepare the tzatziki sauce: In a small bowl, mix Greek yogurt, minced garlic, and diced cucumber. Season with salt and refrigerate until ready to serve.
  • Assemble the bowls: Divide the cooked rice or quinoa into bowls. Top with sliced chicken, cherry tomatoes, red onion, olives, and feta cheese.
  • Garnish and serve: Drizzle with tzatziki sauce and sprinkle with fresh parsley. Enjoy!
