For the Chicken
- 2 boneless skinless chicken breasts, cubed or sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
For the Quinoa
- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- Pinch of salt
For the Bowl
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, sliced
- ½ cup Kalamata olives
- ½ cup crumbled feta cheese
- Mixed greens or spinach
For the Tzatziki Sauce
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill
- Salt and pepper to taste
Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 1 hour.
In a saucepan, combine quinoa, water, and salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until fluffy.
Mix Greek yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Refrigerate until ready to serve.
Grill or pan-sear the marinated chicken over medium-high heat for about 6–8 minutes until cooked through.
Divide quinoa into serving bowls. Top with greens, chicken, cucumbers, tomatoes, onions, olives, and feta cheese.
