Ingredients
  

For the Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and black pepper to taste

For the Filling

  • 4 oz cream cheese, softened
  • ½ cup crumbled feta cheese
  • 1 cup spinach, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • ½ teaspoon dried oregano

Instructions
 

  • Using a sharp knife, cut a pocket into the side of each chicken breast without slicing all the way through.
  • In a bowl, mix cream cheese, feta cheese, spinach, garlic, parsley, lemon zest, and oregano until well combined.
  • Fill each chicken breast pocket with the cream cheese mixture. Secure with toothpicks if necessary.
  • Rub olive oil over the chicken and season with paprika, oregano, salt, and pepper.
  • Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden. Transfer to a preheated oven at 375°F (190°C) and bake for 20–25 minutes until fully cooked.
  • Remove toothpicks, garnish with parsley and lemon wedges, and serve warm.

  • Use softened cream cheese for easier mixing.
  • Fresh spinach gives the best texture and flavor.
  • Do not overstuff the chicken breasts.
  • Secure openings with toothpicks if needed.
  • Chicken thighs can also be used.
