  • 2 cans (15 oz each) garbanzo beans (chickpeas), drained and rinsed
  • 1 large cucumber, diced
  • 2 cups cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ¾ cup feta cheese, crumbled
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

For the Greek Dressing

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Drain and rinse the chickpeas thoroughly and place them in a large mixing bowl.
  • Add the diced cucumber, cherry tomatoes, red onion, and olives.
  • Sprinkle in the parsley and oregano.
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.
  • Pour the dressing over the salad ingredients.
  • Gently toss until everything is evenly coated.
  • Add the crumbled feta cheese and mix lightly.
  • Serve immediately or refrigerate for 30 minutes to enhance the flavors.
