- 1 large cucumber, sliced into thick half-moons
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- ¾ cup Kalamata olives
- 7 oz (200 g) block of feta cheese
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- Salt, to taste
- Freshly ground black pepper, to taste
Wash and dry all the vegetables thoroughly.
Cut the tomatoes into wedges and slice the cucumber into thick half-moons.
Thinly slice the green bell pepper and red onion.
