Ingredients
  

For the Chicken Marinade

  • 1½ pounds boneless chicken breast or thighs, cut into cubes
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For the Skewers

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced thick
  • Wooden or metal skewers

Instructions
 

  • In a large bowl, whisk together olive oil, lemon juice, garlic, vinegar, oregano, thyme, paprika, salt, and pepper until fully combined.
  • Add the chicken cubes to the marinade and mix thoroughly so every piece is coated. Cover and refrigerate for at least 2 hours for the best flavor.
  • Cut all vegetables into similar-sized pieces so they cook evenly on the grill.
  • Thread the marinated chicken and vegetables alternately onto skewers.
  • Preheat the grill to medium-high heat. Grill the skewers for 12–15 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  • Remove from the grill and garnish with parsley, lemon wedges, and feta cheese if desired. Serve hot with tzatziki sauce or pita bread.
