Ingredients
  

  • 2 cups long-grain white rice
  • 3 cups chicken or vegetable broth
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons extra-virgin olive oil
  • 3 garlic cloves, finely minced
  • 1 teaspoon dried Greek oregano
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • ½ cup fresh parsley, finely chopped
  • 2 tablespoons fresh dill, chopped, optional

Instructions
 

  • Place the rice in a fine-mesh strainer and rinse under cold water until the water runs mostly clear. Drain thoroughly.
  • Heat the olive oil in a medium saucepan over medium heat.
  • Add the chopped onion and cook for about 3–4 minutes, until softened. Add the garlic and cook for another 30 seconds, being careful not to burn it.
  • Add the rinsed rice and stir gently for 1–2 minutes. Lightly toasting the rice helps enhance its flavor.
  • Reduce the heat to low and cover the saucepan tightly.
  • Simmer for approximately 15–18 minutes, or until the liquid has been absorbed and the rice is tender.
  • Turn off the heat and let the rice remain covered for 10 minutes.
  • Taste and adjust the lemon juice, salt, and pepper as needed.
  • Transfer the rice to a serving bowl and garnish with additional parsley, lemon zest, and lemon wedges.
  • Serve warm alongside your favorite Greek or Mediterranean dishes.
