- 1 cup parsley (chopped)
- 1 cup cilantro (chopped)
- 1/2 cup fresh thyme leaves
- 1 medium onion (chopped)
- 1 green bell pepper (chopped)
- 6 cloves garlic (peeled)
- 2 scallions (chopped)
- 1 small scotch bonnet pepper (optional, for heat)
- 1/4 lime juice or vinegar
- 1/4 olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Wash all the herbs and vegetables thoroughly to remove dirt and debris.
Roughly chop the parsley, cilantro, thyme, onion, bell pepper, scallions, and scotch bonnet (if using).
Add all the ingredients into a blender or food processor.
Blend until smooth, scraping down the sides as needed. Adjust the consistency with a bit more olive oil if necessary.
Transfer the green seasoning to a clean, airtight jar and refrigerate. It can be stored for up to 2 weeks.
