Ingredients
  

  • 1 cup parsley (chopped)
  • 1 cup cilantro (chopped)
  • 1/2 cup fresh thyme leaves
  • 1 medium onion (chopped)
  • 1 green bell pepper (chopped)
  • 6 cloves garlic (peeled)
  • 2 scallions (chopped)
  • 1 small scotch bonnet pepper (optional, for heat)
  • 1/4 lime juice or vinegar
  • 1/4 olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Wash all the herbs and vegetables thoroughly to remove dirt and debris.
  • Roughly chop the parsley, cilantro, thyme, onion, bell pepper, scallions, and scotch bonnet (if using).
  • Add all the ingredients into a blender or food processor.
  • Blend until smooth, scraping down the sides as needed. Adjust the consistency with a bit more olive oil if necessary.
  • Transfer the green seasoning to a clean, airtight jar and refrigerate. It can be stored for up to 2 weeks.

Notes

  • Adjust the heat level by adding more or less scotch bonnet pepper.
  • For a sweeter profile, add a small piece of ginger.
