Ingredients
  

  • 4 slices of bread (sourdough or white bread)
  • 2 cups shredded cheddar cheese (or a mix of cheeses)
  • 2 tbsp butter

Optional fillings:

  • tomato, jalapeños, ham, garlic powder, herbs

Instructions
 

  • Heat a nonstick skillet over medium heat.
  • Butter one side of each bread slice.
  • Place ½ cup of shredded cheese in the skillet, forming a circle.
  • Immediately place one slice of bread, butter-side up, over the cheese.
  • Add cheese and the second slice of bread on top; flip when the bottom is crispy.
  • Add another layer of cheese to the skillet and place the flipped sandwich on top.
  • Cook until both sides are golden, crispy, and the inside is fully melted.
  • Slice and serve hot.

Notes

  • Use a nonstick skillet for the best crust.
  • Cheddar, mozzarella, or Colby Jack melt beautifully.
  • Avoid high heat—it burns the cheese before melting.
  • Thin layers of cheese create a perfect crispy shell.
  • Let it rest 1 minute before cutting for cleaner slices.
