For the Chicken Skewers
- 2 pounds boneless chicken thighs or breasts, cubed
- 2 tablespoons sesame oil
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- Wooden or metal skewers
For the Teriyaki Marinade
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
For the Miso Ranch
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon white miso paste
- 1 teaspoon lemon juice
- 1 teaspoon dried dill
- ½ teaspoon garlic powder
- Salt and black pepper to taste
Garnish
- Sesame seeds
- Chopped green onions
In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger.
Add chicken cubes to the marinade and refrigerate for at least 30 minutes.
Combine mayonnaise, sour cream, miso paste, lemon juice, dill, garlic powder, salt, and pepper. Mix until smooth and refrigerate.
Thread marinated chicken pieces onto skewers evenly.
Preheat grill to medium-high heat. Grill skewers for 10–15 minutes, turning occasionally until fully cooked and lightly charred.
Pour leftover marinade into a saucepan. Add cornstarch slurry and simmer until thick and glossy.
Brush grilled skewers with thickened teriyaki glaze. Garnish with sesame seeds and green onions. Serve with chilled miso ranch.
