Ingredients
  

For the Chicken Skewers

  • 2 pounds boneless chicken thighs or breasts, cubed
  • 2 tablespoons sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • Wooden or metal skewers

For the Teriyaki Marinade

  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Miso Ranch

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon white miso paste
  • 1 teaspoon lemon juice
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Garnish

  • Sesame seeds
  • Chopped green onions

Instructions
 

  • In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger.
  • Add chicken cubes to the marinade and refrigerate for at least 30 minutes.
  • Combine mayonnaise, sour cream, miso paste, lemon juice, dill, garlic powder, salt, and pepper. Mix until smooth and refrigerate.
  • Thread marinated chicken pieces onto skewers evenly.
  • Preheat grill to medium-high heat. Grill skewers for 10–15 minutes, turning occasionally until fully cooked and lightly charred.
  • Pour leftover marinade into a saucepan. Add cornstarch slurry and simmer until thick and glossy.
  • Brush grilled skewers with thickened teriyaki glaze. Garnish with sesame seeds and green onions. Serve with chilled miso ranch.
