For the Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Heirloom Tomato and Avocado Salsa
- 2 large heirloom tomatoes, diced
- 2 ripe avocados, diced
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1 tablespoon extra virgin olive oil
- Salt and black pepper to taste
Combine olive oil, lime juice, garlic, smoked paprika, onion powder, oregano, cumin, salt, and black pepper. Coat the chicken evenly and marinate for at least 30 minutes.
In a large bowl, gently combine diced heirloom tomatoes, avocado, red onion, cilantro, lime juice, olive oil, and jalapeño if using. Season with salt and pepper. Refrigerate until ready to serve.
Preheat the grill to medium-high heat. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
Transfer the chicken to a plate and let it rest for 5 minutes to retain its juices.
Place the grilled chicken on serving plates and generously spoon the heirloom tomato and avocado salsa over each piece. Garnish with fresh cilantro and lime wedges before serving.
