For the Eggplant
- 2 large eggplants, sliced lengthwise into ¼-inch thick strips
- 2 tablespoons olive oil

Ricotta Filling
- 1½ cups whole milk ricotta cheese
- ½ cup freshly grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon lemon zest
- ½ teaspoon Italian seasoning
- Salt and black pepper, to taste
For Serving
- 1 cup warm marinara sauce (optional)
- Fresh basil leaves
- Extra Parmesan cheese
- Olive oil for drizzling
Preheat the grill to medium-high heat.
Brush both sides of the eggplant slices with olive oil and season lightly with salt and pepper.
