Ingredients

For the Chicken

  • 4 boneless skinless chicken thighs (or breasts)
  • 1 tablespoon oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 teaspoons Chinese five-spice powder
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon rice vinegar
  • ½ teaspoon salt
  • 1 teaspoon vegetable oil (for grilling)

Garnish

  • Sliced green onions
  • Toasted sesame seeds
  • Lime wedges

Instructions

Prepare the Marinade

  • In a large bowl, whisk together soy sauce, oyster sauce, honey, sesame oil, five-spice powder, garlic, ginger, rice vinegar, salt, and pepper.

 Marinate

  • Add the chicken and coat evenly. Cover and refrigerate for at least 2 hours or overnight for deeper flavor.

Grill

  • Cook the chicken for 6–7 minutes per side, depending on thickness, until nicely charred and the internal temperature reaches 165°F (74°C).

Rest

  • Transfer the chicken to a plate and let it rest for 5 minutes before slicing.

Garnish

  • Sprinkle with sesame seeds and green onions. Serve with lime wedges.

Notes

  • Chicken thighs remain juicier than breasts.
  • Overnight marination creates richer flavor.
  • Avoid excessive five-spice seasoning, as it's very aromatic.
  • Oil the grill to prevent sticking.
  • Let the chicken rest before slicing.
  • Fresh ginger gives the best flavor.
  • Always cook to an internal temperature of 165°F.
  • Double the marinade for larger batches.
