Ingredients
  

For the Salad

  • 2 pounds baby potatoes, halved
  • 1 tablespoon olive oil
  • 6 slices bacon, diced
  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon chives, chopped

For the Dressing

  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons bacon drippings
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Place potatoes in a large pot and cover with water. Bring to a boil and cook until just fork-tender, about 12–15 minutes. Drain and allow to cool slightly.
  • Cook the diced bacon in a skillet until crispy. Remove with a slotted spoon and reserve the drippings.
  • Brush the potatoes with olive oil and grill over medium-high heat for 8–10 minutes, turning occasionally until lightly charred.
  • In a bowl, whisk together apple cider vinegar, Dijon mustard, honey, bacon drippings, salt, and black pepper.
  • Place grilled potatoes in a large serving bowl. Add crispy bacon, sliced onions, parsley, and chives.
  • Pour the warm dressing over the potatoes and gently toss until evenly coated.
  • Serve warm or at room temperature.
