Ingredients
  

For the Chicken Marinade

  • 4 boneless chicken breasts
  • ¼ cup olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For the Whipped Feta

  • 8 ounces feta cheese
  • ¼ cup Greek yogurt
  • 2 tablespoons cream cheese
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Black pepper to taste

Instructions
 

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Coat chicken breasts thoroughly and refrigerate for at least 1 hour.
  • Add feta cheese, Greek yogurt, cream cheese, olive oil, lemon juice, and black pepper to a food processor. Blend until smooth and creamy.
  • Heat grill to medium-high heat and lightly oil the grates.
  • Place chicken breasts on the grill and cook for 6–7 minutes per side until beautifully charred and fully cooked.
  • Remove chicken from the grill and let rest for 5 minutes to retain juices.
  • Spread whipped feta onto a serving platter or plate. Top with grilled chicken breasts.
  • Add parsley, tomatoes, cucumbers, olives, and warm pita bread before serving.
