Ingredients

For the Beef

  • 2½ pounds flanken-cut beef short ribs
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • 1 Asian pear, peeled and grated
  • 5 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons sesame oil
  • 2 green onions, finely chopped
  • 1 tablespoon sesame seeds

For Serving

  • Steamed white rice
  • Kimchi
  • Lettuce leaves
  • Sliced green onions
  • Extra sesame seeds

Instructions

Make the Marinade

  • In a large bowl, combine soy sauce, brown sugar, honey, grated Asian pear, garlic, ginger, sesame oil, rice vinegar, green onions, black pepper, and sesame seeds. Mix until the sugar dissolves.

Marinate the Ribs

  • Place the beef short ribs in a large resealable bag or shallow dish. Pour the marinade over the ribs, ensuring every piece is coated. Refrigerate for at least 4 hours or overnight for maximum flavor.

Prepare the Grill

  • Preheat your grill to medium-high heat (about 425°F / 220°C). Lightly oil the grill grates.

Grill

  • Remove the ribs from the marinade and shake off the excess. Grill for 3–5 minutes per side until nicely charred and cooked to your preferred doneness.

Rest

  • Transfer the ribs to a serving platter and let them rest for 5 minutes.

Garnish and Serve

  • Sprinkle with sliced green onions and sesame seeds. Serve hot with steamed rice, kimchi, and lettuce leaves for wrapping.

Notes

  • Flanken-cut ribs cook quickly and absorb the marinade well.
  • Asian pear helps tenderize the beef naturally.
  • Overnight marination provides the best flavor.
  • Avoid overcooking to keep the ribs juicy.
  • Pat the ribs lightly before grilling to reduce flare-ups.
  • Use fresh garlic and ginger for authentic taste.
  • Grill over high heat for the best caramelization.
  • Leftovers are delicious in fried rice or wraps.
