For the Beef
- 2 lbs (900 g) flank steak, skirt steak, or sirloin steak
- 1 tablespoon olive oil
For the Mojo Marinade
- ½ cup fresh orange juice
- 2 tablespoons lemon juice
- 6 cloves garlic, minced
- ¼ cup olive oil
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh cilantro
Pat the beef dry with paper towels.
In a large bowl, whisk together the orange juice, lime juice, lemon juice, garlic, olive oil, cumin, oregano, smoked paprika, salt, pepper, cilantro, and parsley.
Place the beef in a resealable bag or shallow dish and pour the marinade over it.
Cover and refrigerate for at least 4 hours or overnight, turning occasionally.
Remove the beef from the refrigerator 30 minutes before grilling.
Grill the beef for 5–7 minutes per side for medium-rare, or cook to your preferred doneness.
Transfer the beef to a cutting board and let it rest for 10 minutes.
Slice thinly against the grain.
