Ingredients

For the Pork Chops

  • 4 bone-in pork chops (about 1 inch thick)
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon rice vinegar
  • ½ teaspoon black pepper

Garnish

  • Sliced green onions
  • Toasted sesame seeds
  • Lime wedges

Instructions

Prepare the Marinade

  • In a medium bowl, whisk together soy sauce, hoisin sauce, brown sugar, honey, sesame oil, garlic, ginger, rice vinegar, chili flakes (if using), and black pepper until well combined.

Marinate the Pork

  • Place the pork chops in a resealable bag or shallow dish. Pour the marinade over the chops, ensuring they are evenly coated. Refrigerate for 2–6 hours, turning occasionally.

Preheat the Grill

  • Heat your grill to medium-high (about 400°F / 200°C). Lightly oil the grill grates to prevent sticking.

Grill the Pork Chops

  • Remove the pork chops from the marinade and let any excess drip off. Grill for 5–6 minutes per side, or until the internal temperature reaches 145°F (63°C).

Rest

  • Transfer the pork chops to a plate and let them rest for 5 minutes to retain their juices.

Garnish and Serve

  • Sprinkle with green onions and toasted sesame seeds. Serve with lime wedges, steamed rice, grilled vegetables, or stir-fried noodles.

Notes

  • Bone-in pork chops stay juicier during grilling.
  • Marinating overnight deepens the flavor.
  • Avoid overcooking to keep the pork tender.
  • Let the meat rest before slicing.
  • Fresh ginger and garlic provide the best flavor.
  • Brush the grill with oil to prevent sticking.
  • Reduce the chili flakes for a milder version.
  • Leftovers are excellent in sandwiches, wraps, or fried rice.
