Ingredients

  • 1 lb (450 g) smoked sausage or Italian sausage, sliced into large pieces
  • 1½ lbs baby potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • Salt, to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  • Preheat the grill to medium-high heat (about 400°F/200°C).
  • Boil the baby potatoes for 8–10 minutes until just tender. Drain and allow them to cool slightly.
  • In a large bowl, combine the potatoes, green beans, and sausage.
  • Add olive oil, garlic, smoked paprika, Italian seasoning, onion powder, salt, and black pepper. Toss until everything is evenly coated.
  • Transfer the mixture to a grill basket or a large sheet of heavy-duty aluminum foil, folding the edges to create a sealed packet.
  • Place the basket or foil packet on the grill and cook for 20–25 minutes, turning or stirring occasionally.
  • Open the foil carefully during the last 5 minutes to allow the ingredients to brown slightly and develop a smoky flavor.
  • Remove from the grill, garnish with fresh parsley, and serve with lemon wedges if desired.

Notes

  • Baby potatoes cook faster and develop a creamy texture.
  • Pre-boiling the potatoes ensures even grilling.
  • Use fresh green beans for the best flavor and texture.
  • Smoked sausage adds extra depth and richness.
  • Foil packets make cleanup quick and easy.
  • Grill baskets provide more caramelization.
  • Fresh herbs enhance the finished dish.
  • Leftovers can be refrigerated for up to 3 days.
