Ingredients
  

For the Beef

  • 2 lbs (900 g) beef sirloin steak or flank steak
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

For the Mustard Marinade

  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt

Instructions
 

  • Pat the beef dry with paper towels.
  • In a bowl, whisk together both mustards, olive oil, garlic, lemon juice, vinegar, smoked paprika, oregano, thyme, cumin, salt, and pepper.
  • Coat the beef evenly with the marinade.
  • Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
  • Remove the beef from the refrigerator 20–30 minutes before grilling.
  • Preheat the grill to medium-high heat and lightly oil the grates.
  • Grill the beef for 5–7 minutes per side for medium-rare, or longer to your preferred doneness.
  • Transfer the beef to a cutting board and let it rest for 10 minutes.
  • Slice thinly against the grain.
  • Garnish with chopped parsley, grilled peppers, and a squeeze of fresh lemon before serving.
