For the Chicken
- 1 whole chicken (about 4–5 pounds)
- ¼ cup olive oil
- 4 garlic cloves, minced
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper

Place the chicken breast-side down. Using kitchen shears, remove the backbone by cutting along both sides. Flip the chicken over and press firmly on the breastbone until it lies flat.
In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, vinegar, oregano, thyme, paprika, salt, and pepper.
Rub the marinade all over the chicken, including under the skin where possible. Cover and refrigerate for at least 4 hours or overnight.
Heat the grill to medium heat and lightly oil the grates.
Place the chicken skin-side up on the grill. Cook covered for about 40–45 minutes, turning occasionally, until the skin is crispy and the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving. Garnish with parsley, lemon wedges, and feta cheese if desired.
