For the Tri-Tip

  • 2½ to 3 pounds tri-tip roast
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1½ teaspoons salt
  • ½ teaspoon onion powder

Instructions
 

  • Pat the tri-tip dry using paper towels.
  • In a bowl, combine olive oil, garlic, Worcestershire sauce, soy sauce, rosemary, parsley, black pepper, smoked paprika, salt, and onion powder.
  • Rub the marinade thoroughly over the tri-tip and refrigerate for at least 2 hours.
  • Preheat the grill to medium-high heat.
  • Place the tri-tip on the hot grill and sear for about 5–7 minutes per side.
  • Move the meat to indirect heat and continue cooking until the internal temperature reaches:
  • Remove the tri-tip from the grill and let it rest for 10 minutes.
  • Slice thinly against the grain and serve warm.
