- 2 zucchini, sliced into thick rounds
- 2 yellow squash, sliced into thick rounds
- 2 bell peppers (red and yellow), cut into large chunks
- 1 large red onion, cut into wedges
- 8 ounces button or cremini mushrooms
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- 1 tablespoon fresh lemon juice
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a large bowl, whisk together the olive oil, garlic, Italian seasoning, smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, and lemon juice.
Add the zucchini, squash, bell peppers, onions, mushrooms, and cherry tomatoes to the bowl. Toss until all the vegetables are evenly coated.
Allow the vegetables to marinate for 20 minutes.
Thread the vegetables onto skewers, alternating colors and varieties for an attractive presentation.
Preheat the grill to Medium-High Heat (400°F/200°C).
