Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup Guinness stout beer
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese (shredded)
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder
  • ¼ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Chopped chives
  • Crumbled bacon
  • Extra shredded cheese
  • Soft pretzels
  • Toasted baguette slices
  • Crackers
  • Vegetable sticks

Instructions

  • Melt butter in a saucepan over medium heat. Add flour and whisk continuously for about 1–2 minutes until smooth and lightly golden.
  • Slowly pour in the Guinness beer while whisking to prevent lumps. Let it simmer for 2–3 minutes.
  • Stir in the milk and continue whisking until the mixture thickens slightly.
  • Gradually add shredded cheddar cheese while stirring until melted and smooth.
  • Add garlic powder, mustard powder, paprika, salt, and black pepper.
  • Cook for another 2–3 minutes until the dip becomes creamy and thick.
  • Transfer to a serving bowl and garnish with chives or bacon. Serve warm with pretzels or bread.

Notes

  • Use freshly shredded cheese for the smoothest texture.
  • Sharp cheddar gives the best bold flavor.
  • The alcohol cooks off during heating.
  • Guinness adds depth but other stouts can work too.
  • If the dip thickens too much, add a little milk.
  • Stir continuously to prevent the cheese from clumping.
  • Serve warm for the best taste and texture.
  • Leftovers can be reheated gently with milk.
