- 3-4 hot dogs or smoked sausages (sliced)
- 2 tbsp vegetable oil
- 1 medium onion (diced)
- 1 bell pepper (sliced, any color)
- 3 cloves garlic (minced)
- 1/4 cup tomato paste
- 1/2 cup chicken broth (or water)
- 1 tsp thyme (dried or fresh)
- 1 tsp parsley (chopped)
- 1 tsp paprika
- 1/2 tsp crushed red pepper flakes (optional, for heat)
- Salt and black pepper to taste
- Fresh lime or lemon juice (optional, for serving)
Cook the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package instructions. Drain and set aside. Cook the sausage: Heat the vegetable oil in a large skillet over medium heat. Add the sliced sausage or hot dogs and sauté until lightly browned. Remove and set aside. Sauté the vegetables: In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are softened and fragrant. Prepare the sauce: Stir in the tomato paste and cook for 1-2 minutes. Gradually add the chicken broth or water, stirring to create a smooth sauce. Season the sauce: Add thyme, parsley, paprika, crushed red pepper flakes (if using), salt, and black pepper. Let the sauce simmer for 5 minutes. Combine: Return the sausage to the skillet and add the cooked spaghetti. Toss everything together until the spaghetti is well coated with the sauce and heated through. Serve: Transfer to plates and garnish with fresh parsley or a squeeze of lime/lemon juice if desired. Serve immediately.
