Ingredients

  • 1 lb spaghetti
  • 3-4 hot dogs or smoked sausages (sliced)
  • 2 tbsp vegetable oil
  • 1 medium onion (diced)
  • 1 bell pepper (sliced, any color)
  • 3 cloves garlic (minced)
  • 1/4 cup tomato paste
  • 1/2 cup chicken broth (or water)
  • 1 tsp thyme (dried or fresh)
  • 1 tsp parsley (chopped)
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • Fresh lime or lemon juice (optional, for serving)

Instructions

  • Cook the spaghetti:
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package instructions. Drain and set aside.
  • Cook the sausage:
Heat the vegetable oil in a large skillet over medium heat. Add the sliced sausage or hot dogs and sauté until lightly browned. Remove and set aside.
  • Sauté the vegetables:
In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are softened and fragrant.
  • Prepare the sauce:
Stir in the tomato paste and cook for 1-2 minutes. Gradually add the chicken broth or water, stirring to create a smooth sauce.
  • Season the sauce:
Add thyme, parsley, paprika, crushed red pepper flakes (if using), salt, and black pepper. Let the sauce simmer for 5 minutes.
  • Combine:
Return the sausage to the skillet and add the cooked spaghetti. Toss everything together until the spaghetti is well coated with the sauce and heated through.
  • Serve:
Transfer to plates and garnish with fresh parsley or a squeeze of lime/lemon juice if desired. Serve immediately.

Notes

  • For a richer flavor, use smoked sausage or add a splash of Haitian epis (seasoning blend).
  • Adjust the spice level by increasing or omitting the crushed red pepper flakes.
