small onion, chopped

cloves garlic, minced

beef broth

diced tomatoes

frozen mixed vegetables

medium potatoes, diced

Worcestershire sauce

Italian seasoning
Salt and pepper to taste

Instructions
Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant.
Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
Stir in beef broth, diced tomatoes, potatoes, Worcestershire sauce, and Italian seasoning.
Bring to a boil, then reduce heat and let simmer for 20 minutes.
Add frozen mixed vegetables and cook for another 5-10 minutes until vegetables are tender.
Season with salt and pepper to taste.
Serve hot and enjoy!
Notes
For a richer flavor, let the soup sit for an hour before serving to allow the flavors to blend.
