Hamburger Soup

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen mixed vegetables
  • 2 medium potatoes, diced
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant.
  • Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  • Stir in beef broth, diced tomatoes, potatoes, Worcestershire sauce, and Italian seasoning.
  • Bring to a boil, then reduce heat and let simmer for 20 minutes.
  • Add frozen mixed vegetables and cook for another 5-10 minutes until vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

For a richer flavor, let the soup sit for an hour before serving to allow the flavors to blend.
