Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups green cabbage, chopped
  • 5 cups vegetable or chicken broth
  • ½ teaspoon black pepper
  • Salt to taste
  • ½ teaspoon dried thyme or bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic; sauté until soft and fragrant.
  • Stir in carrots and celery; cook for 3–4 minutes.
  • Add chopped cabbage and cook until slightly wilted.
  • Pour in broth and add tomatoes if using.
  • Season with salt, pepper, and thyme.
  • Simmer for 25–30 minutes until vegetables are tender.
  • Serve warm.
