Ingredients
  

  • 2 lbs baby potatoes, halved
  • ¾ cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar or lemon juice
  • ¼ cup red onion, finely chopped
  • ¼ cup celery, finely chopped
  • 2 tablespoons fresh dill or parsley, chopped
  • Freshly ground black pepper, to taste

Instructions
 

  • Boil potatoes in salted water until fork-tender, about 12–15 minutes.
  • Drain and let potatoes cool slightly.
  • In a bowl, whisk Greek yogurt, mayonnaise (if using), mustard, vinegar, salt, and pepper until smooth.
  • Add potatoes, onion, celery, and herbs to the dressing.
  • Toss gently until evenly coated.
  • Chill for 15 minutes before serving.
