- ¾ cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar or lemon juice
- ¼ cup red onion, finely chopped

- 2 tablespoons fresh dill or parsley, chopped
- Freshly ground black pepper, to taste
Boil potatoes in salted water until fork-tender, about 12–15 minutes.
