  • 3 cups cooked chicken breast, diced or shredded
  • 1 cup celery, finely chopped
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup red grapes, halved (optional)
  • ¼ cup chopped walnuts or almonds (optional)

For the Healthy Dressing

  • 1 tablespoon Dijon mustard

Instructions

  • In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, honey, olive oil, garlic powder, salt, and black pepper until smooth.
  • Pour the dressing over the chicken mixture.

  • Cover and refrigerate for at least 20 minutes to allow the flavors to blend.
