Rinse the farro thoroughly under cold running water. Place it in a saucepan with water according to the package instructions and bring to a boil. Reduce the heat and simmer until the grains become tender but remain pleasantly chewy. This usually takes 20–35 minutes, depending on the type of farro. Drain any excess water and set aside.
Preheat your oven to 400°F (200°C). Place the cherry tomatoes, diced bell pepper, and zucchini on a baking tray. Drizzle with one tablespoon of olive oil and season with salt and black pepper. Toss to coat evenly and roast for 20–25 minutes, or until the vegetables are tender and lightly caramelized.
In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, minced garlic, Dijon mustard, oregano, and lemon zest. Season with salt and black pepper. Continue whisking until the dressing is well combined and slightly emulsified.
Transfer the cooked farro to a large mixing bowl while it is still warm. Add the roasted vegetables and toss gently. The warmth helps the grains absorb the dressing and allows the flavors to blend together.
Add the baby spinach, sliced red onion, and chopped parsley. Toss gently until the spinach begins to soften slightly from the warmth of the farro and vegetables.
Pour the lemon dressing over the salad. Mix thoroughly so that the grains and vegetables are evenly coated. Taste and adjust the seasoning with additional lemon juice, salt, or black pepper if needed.
Sprinkle the crumbled feta cheese and toasted pumpkin seeds over the salad. For extra flavor, add a little more chopped parsley and a light drizzle of olive oil.
Serve immediately while the farro and roasted vegetables are warm. Garnish with fresh lemon wedges if desired. This salad pairs beautifully with grilled chicken, baked fish, roasted chickpeas, or crusty whole-grain bread.
