- 2 cups cooked black beans (or canned, drained)
- 1 tablespoon olive oil
- 1 medium onion (chopped)
- 1 bell pepper (chopped)
- 3 garlic cloves (minced)
- 2 cups chopped tomatoes (or canned tomatoes)
- 2 tablespoons tomato paste
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon cayenne pepper (optional)
- 1 tablespoon lime juice
- Fresh coriander for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until soft.
Add bell pepper and cook for 3–4 minutes.
Add garlic and sauté briefly.
Stir in tomatoes and tomato paste.
Add black beans and vegetable broth.
Mix in salt, pepper, cumin, chili powder, paprika, and oregano.
Bring to a gentle boil.
Reduce heat and simmer for 30–40 minutes.
Stir occasionally.
Add lime juice before serving.
