Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 lb (450 g) chicken breast or thighs
  • 6 cups chicken broth
  • ¾ cup white or brown rice
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme or bay leaf

Instructions
 

  • Heat oil or butter in a large pot over medium heat.
  • Add onion and garlic; sauté until fragrant.
  • Stir in carrots and celery, cooking for 3–4 minutes.
  • Add chicken and pour in the broth.
  • Season with salt, pepper, and thyme.
  • Bring to a gentle boil, then simmer for 20 minutes.
  • Add rice and cook until tender, about 15 minutes.
  • Serve hot.

Notes

  • Rice will thicken the soup as it cooks.
  • Use bone-in chicken for deeper flavour.
  • Brown rice requires longer cooking time.
