Instructions

  • Stir in the diced onion and cook for 4–5 minutes until softened.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Mix in the carrots, celery, and potatoes.
  • Pour in the diced tomatoes, tomato sauce, and beef broth.
  • Season with Italian seasoning, smoked paprika, Worcestershire sauce, salt, and black pepper.
  • Bring the soup to a gentle boil, then reduce the heat to low.
  • Cover and simmer for 25–30 minutes, or until the potatoes are tender.
  • Taste and adjust the seasoning if needed.
