Ingredients
  

  • 1 cup dried lentils (washed and rinsed)
  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 3 garlic cloves (minced)
  • 5 cups vegetable broth or water
  • ½ teaspoon black pepper
  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric
  • 1 bay leaf
  • Fresh parsley or coriander for garnish

Instructions
 

  • Wash lentils thoroughly and set aside.
  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and sauté until soft.
  • Add carrots and celery and cook for 5 minutes.
  • Stir in garlic and cook for 1 minute.
  • Add chopped tomatoes and cook until softened.
  • Add lentils and broth.
  • Bring to a boil.
  • Reduce heat and simmer for 35–40 minutes.
  • Remove bay leaf.
  • Serve hot with fresh herbs.

Notes

  • Red lentils cook faster than brown lentils.
  • Add more broth for thinner soup.
  • Use fresh vegetables for best flavour.
  • Soup thickens after cooling.
  • Store in refrigerator up to 4 days.
  • Can be frozen for 3 months.
  • Stir before reheating.
