- 1 cup dried lentils (washed and rinsed)
- 1 tablespoon olive oil
- 1 medium onion (chopped)
- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 3 garlic cloves (minced)
- 5 cups vegetable broth or water
- ½ teaspoon black pepper
- 1 teaspoon cumin powder
- ½ teaspoon turmeric
- 1 bay leaf
- Fresh parsley or coriander for garnish
Wash lentils thoroughly and set aside.
Heat olive oil in a large pot over medium heat.
Add chopped onions and sauté until soft.
Add carrots and celery and cook for 5 minutes.
Stir in garlic and cook for 1 minute.
Add chopped tomatoes and cook until softened.
Add lentils and broth.
Bring to a boil.
Reduce heat and simmer for 35–40 minutes.
Remove bay leaf.
Serve hot with fresh herbs.
