Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced (optional)
  • 1 can black beans, 15 ounces, drained and rinsed
  • 1 can kidney beans, 15 ounces, drained and rinsed
  • 1½ cups sweet corn kernels, fresh or frozen
  • 1 can diced tomatoes, 14.5 ounces
  • 1 can red enchilada sauce, approximately 10 ounces
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1½ teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper
  • 1 tablespoon fresh lime juice

Instructions

  • Chop the onion and bell peppers into small pieces. Dice the zucchini if using it, mince the garlic, and drain and rinse the canned beans.
Measure the spices, vegetable broth, enchilada sauce, and other ingredients before you begin. This preparation makes the cooking process easier and helps the soup come together smoothly.
  • Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the chopped onion and bell peppers.
Cook for approximately 4–5 minutes, stirring occasionally, until the vegetables soften. Add the minced garlic and cook for another 30–60 seconds until fragrant.
If using zucchini, add it now and cook for another 2 minutes.
  • Stir in the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper.
Cook the spices with the vegetables for about 30 seconds. This brief step helps release their aromas and gives the soup a deeper, more developed flavor.
Add the tomato paste and stir for another minute.
  • Add the diced tomatoes, enchilada sauce, and vegetable broth to the pot. Stir thoroughly, scraping the bottom of the pot to incorporate any flavorful bits.
Bring the mixture to a gentle boil, then reduce the heat to medium-low. Allow the broth to simmer for approximately 5 minutes so the seasonings begin to blend.
  • Add the black beans, kidney beans, and sweet corn to the simmering broth. Stir well to distribute the ingredients evenly.
Reduce the heat to low and simmer for 15–20 minutes, stirring occasionally. This gives the beans and corn time to absorb the rich enchilada flavors.
  • For a thicker soup, use a potato masher to mash a small portion of the beans directly in the pot. Alternatively, transfer about one cup of the soup to a blender, blend until smooth, and return it to the pot.
If the soup is too thick, add a little extra vegetable broth. If you prefer a more concentrated flavor, allow it to simmer uncovered for a few additional minutes.
  • Turn off the heat and stir in the fresh lime juice. Taste the soup and adjust the salt, pepper, or chili powder as needed.
For extra spice, add a little cayenne pepper or some sliced jalapeños. For a milder flavor, use mild enchilada sauce and reduce the chili powder.
  • Ladle the hot soup into individual bowls. Add diced avocado, shredded cheese, fresh cilantro, and crunchy tortilla strips.
Serve immediately with warm tortillas, cornbread, or a fresh green salad. A squeeze of lime just before eating adds brightness and balances the savory, smoky broth.

Notes

  • Choose your beans: Black beans and kidney beans create a hearty combination, but pinto beans or cannellini beans also work.
  • Use mild or spicy enchilada sauce: Choose according to your preferred heat level.
  • Rinse canned beans: This removes excess canning liquid and may help reduce sodium.
  • Use fresh or frozen corn: Both provide excellent flavor and texture.
  • Adjust the thickness: Mash some of the beans or blend a small portion of the soup.
  • Add more vegetables: Carrots, zucchini, spinach, and diced sweet potatoes can make the soup more varied.
  • Keep toppings separate: Add avocado, cheese, and tortilla strips immediately before serving for the best texture.
  • Store leftovers safely: Refrigerate in airtight containers within two hours and consume within 3–4 days
