For the Salsa
- 2 (15-ounce) cans black beans, drained and rinsed
- 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
- 2 cups cherry tomatoes, halved
- 1 red bell pepper, finely diced
- 1 green bell pepper, finely diced
- ½ cup red onion, finely chopped
- ½ cup fresh cilantro, chopped
- 1 jalapeño, finely minced (optional)
- 1 avocado, diced (optional, add just before serving)
For the Dressing
- ¼ cup extra virgin olive oil
- ¼ cup fresh lime juice
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
In a large mixing bowl, combine the black beans, corn, tomatoes, bell peppers, red onion, cilantro, and jalapeño if using.
In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, honey, cumin, chili powder, garlic powder, salt, and black pepper.
Pour the dressing over the bean and vegetable mixture.
