  • 2 (15-ounce) cans black beans, drained and rinsed
  • 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
  • 2 cups cherry tomatoes, halved
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • ½ cup red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, finely minced (optional)
  • 1 avocado, diced (optional, add just before serving)

For the Dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Instructions
 

  • In a large mixing bowl, combine the black beans, corn, tomatoes, bell peppers, red onion, cilantro, and jalapeño if using.
  • In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, honey, cumin, chili powder, garlic powder, salt, and black pepper.
  • Pour the dressing over the bean and vegetable mixture.
  • Gently toss everything together until evenly coated.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Just before serving, gently fold in the diced avocado if using.
  • Taste and adjust the seasoning with additional salt, pepper, or lime juice if needed.
  • Serve chilled with tortilla chips or as a topping for your favorite dishes.
