Ingredients
  

  • 1 wheel of brie cheese (8–10 oz)
  • 1 sheet puff pastry, thawed
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 egg, beaten (for egg wash)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Roll out puff pastry slightly on a floured surface.
  • Mix rosemary, thyme, garlic, and olive oil in a small bowl.
  • Place brie in the center of the pastry and spread herb mixture on top.
  • Wrap pastry around the brie, sealing edges underneath.
  • Brush pastry with beaten egg.
  • Bake for 22–25 minutes until golden brown.

Notes

  • Keep puff pastry cold before baking.
  • Do not remove the rind from the brie.
  • Seal pastry well to prevent leaking.
  • Resting time helps cheese set slightly.
  • Best served warm.
