Ingredients
  

For the Potatoes

  • 2½ pounds (1.1 kg) Yukon Gold or baby potatoes
  • ⅓ cup extra-virgin olive oil
  • ⅓ cup fresh lemon juice
  • ¾ cup vegetable or chicken broth
  • 4 garlic cloves, finely minced
  • 1½ teaspoons dried Greek oregano
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika, optional

For Finishing

  • ¾ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh oregano, optional
  • 1 teaspoon lemon zest
  • Lemon wedges, for serving
  • 1 tablespoon extra-virgin olive oil, optional

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Wash the potatoes thoroughly. Peel them if desired, then cut them into evenly sized wedges or large chunks.
  • In a small bowl, whisk together olive oil, lemon juice, broth, minced garlic, oregano, salt, pepper, and paprika if using.
  • Place the potatoes in a large roasting pan or baking dish.
  • Pour the lemon-garlic mixture over the potatoes and toss thoroughly until every piece is coated.
  • Place the pan in the preheated oven and roast for approximately 35–40 minutes.
  • Once the potatoes are tender, increase the oven temperature to 450°F (230°C).
  • Continue roasting for another 10–15 minutes, or until the edges are deeply golden and crisp.
  • For lightly warmed feta, return the pan to the oven for 2–3 minutes. For a fresher feta flavor, simply add it after the potatoes come out of the oven.
  • Sprinkle the potatoes with fresh parsley, dill, oregano, and lemon zest.
  • Serve immediately while hot.

  • Cut evenly: Similar-sized pieces cook more consistently.
