For the Potatoes
- 2½ pounds (1.1 kg) Yukon Gold or baby potatoes
- ⅓ cup extra-virgin olive oil
- ⅓ cup fresh lemon juice
- ¾ cup vegetable or chicken broth
- 4 garlic cloves, finely minced
- 1½ teaspoons dried Greek oregano
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon paprika, optional
For Finishing
- ¾ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh oregano, optional
- 1 teaspoon lemon zest
- Lemon wedges, for serving
- 1 tablespoon extra-virgin olive oil, optional
Preheat the oven to 425°F (220°C).
Wash the potatoes thoroughly. Peel them if desired, then cut them into evenly sized wedges or large chunks.
In a small bowl, whisk together olive oil, lemon juice, broth, minced garlic, oregano, salt, pepper, and paprika if using.
Place the potatoes in a large roasting pan or baking dish.
Pour the lemon-garlic mixture over the potatoes and toss thoroughly until every piece is coated.
Place the pan in the preheated oven and roast for approximately 35–40 minutes.
Once the potatoes are tender, increase the oven temperature to 450°F (230°C).
Continue roasting for another 10–15 minutes, or until the edges are deeply golden and crisp.
For lightly warmed feta, return the pan to the oven for 2–3 minutes. For a fresher feta flavor, simply add it after the potatoes come out of the oven.
Sprinkle the potatoes with fresh parsley, dill, oregano, and lemon zest.
Serve immediately while hot.
