Ingredients
  

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 large onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat a large cast-iron skillet over medium campfire heat. Add olive oil and cook the ground beef until browned. Drain excess fat if necessary.
  • Add onions and garlic. Cook for about 3 minutes until fragrant.
  • Stir in potatoes, carrots, bell peppers, mushrooms, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Cover the skillet and cook for 20–25 minutes, stirring occasionally until potatoes become fork-tender.
  • Sprinkle shredded cheddar cheese evenly over the top.
  • Cover again for 2–3 minutes until the cheese melts completely.
  • Garnish with chopped parsley.
  • Serve hot with crusty bread or biscuits.
