Ingredients

For the Fresh Pumpkin Puree

  • 1 small sugar pumpkin, approximately 2–3 pounds (900 g–1.4 kg)
  • A little water for roasting or steaming, if needed

For the Pie Crust

  • 1¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup (113 g) cold unsalted butter, cubed
  • 3–5 tablespoons ice-cold water

For the Pumpkin Filling

  • 1¾ cups thick fresh pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • ¾ cup evaporated milk
  • ¼ cup whole milk
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 400°F (200°C). Wash the pumpkin thoroughly, cut it in half, and scoop out the seeds and stringy pulp. Cut the pumpkin into manageable wedges and place them cut-side down on a lined baking tray.
Roast for approximately 30–45 minutes, depending on the size of the pieces, until the flesh is fork-tender. Allow the pumpkin to cool enough to handle, then scoop out the soft flesh and discard the skin.
  • Transfer the cooked pumpkin flesh to a food processor or blender and blend until smooth. If the puree appears watery, place it in a fine-mesh strainer lined with cheesecloth and let the excess liquid drain.
Measure 1¾ cups of thick puree for the recipe. Allow it to cool before mixing it with the eggs to avoid prematurely cooking them.
  • In a mixing bowl, combine the flour and salt. Cut in the cold butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Add ice-cold water one tablespoon at a time, mixing just until the dough comes together. Shape it into a disk, wrap it, and refrigerate for about 30 minutes.
Roll the chilled dough into a circle large enough to fit a 9-inch pie dish. Gently press it into the dish, trim the excess, and crimp the edges.
  • In a large bowl, whisk together the fresh pumpkin puree, sugar, cinnamon, ginger, nutmeg, cloves, and salt.
Add the eggs and whisk gently until combined. Gradually pour in the evaporated milk, whole milk, and vanilla extract. Mix until the filling is smooth and evenly blended.
Avoid adding excessive air while whisking, as this can contribute to bubbles or cracks during baking.
  • Pour the prepared pumpkin mixture into the unbaked pie crust. Smooth the top gently with a spatula if necessary.
Place the pie dish on a baking tray to make it easier to transfer into the oven and catch any accidental spills.
  • Preheat the oven to 425°F (220°C), if you have not already done so for the crust. Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C).
Continue baking for approximately 35–45 minutes, or until the outer filling is set and the center still has a slight wobble. If the crust browns too quickly, cover the edges loosely with aluminum foil.
The exact baking time depends on the thickness of the filling, the moisture content of the pumpkin, and your oven.
  • Remove the pie from the oven and place it on a wire rack. Let it cool for at least 2–3 hours. The filling will continue to set as it cools, making the pie easier to slice.
For the best texture, refrigerate the cooled pie until thoroughly chilled. Do not cut it while it is still hot, as the filling may fall apart.
  • Beat the heavy whipping cream, powdered sugar, and vanilla extract in a chilled bowl until soft or medium peaks form.
Cut the cooled pie into eight slices and serve each piece with whipped cream. Add a light sprinkle of cinnamon for extra fragrance and an attractive finishing touch.

Notes

  • Choose a sugar pumpkin: Small pie pumpkins are generally sweeter and less watery than large carving pumpkins.
  • Drain excess moisture: Fresh pumpkin puree can contain more water than canned puree. Thick puree helps the filling set properly.
  • Cool the puree: Always let the pumpkin puree cool before adding the eggs.
  • Use cold butter: Cold butter helps create a tender, flaky homemade crust.
  • Measure the puree after cooking: The recipe requires 1¾ cups of prepared puree, not 1¾ cups of raw pumpkin.
  • Adjust the spices to taste: Add a little extra cinnamon or ginger if you prefer a stronger spice flavor.
  • Avoid overbaking: Excessive baking can make the custard dry or cause cracks.
  • Refrigerate promptly: Pumpkin pie contains eggs and milk, so refrigerate it within two hours after baking or serving.
