For the Dough
- 2 sheets puff pastry, thawed
- 1 egg, beaten (for egg wash)
For the Filling
- 2 cups cooked ham, diced
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Dijon mustard (optional)
- ½ teaspoon black pepper
In a mixing bowl, combine diced ham, cheddar cheese, mozzarella cheese, mustard, and black pepper.Mix until evenly combined.
Preheat oven to 400°F (200°C).Line a baking sheet with parchment paper.Roll out puff pastry sheets slightly.Cut each sheet into four equal rectangles.
Place filling on one half of each rectangle.Leave a border around the edges.Fold pastry over the filling.Press edges firmly with a fork to seal.
Transfer pockets to prepared baking sheet.Brush tops with beaten egg.Cut small slits in the tops for steam to escape.
Bake for 18–20 minutes.Bake until golden brown and puffed.Remove from oven and cool for 5 minutes.
