Ingredients
  

For the Crust and Crumb Topping

  • 2½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Peach Filling

  • 4 cups fresh peaches, peeled and diced
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter until coarse crumbs form. Stir in the egg and vanilla until the mixture becomes crumbly.
  • Press about two-thirds of the crumb mixture firmly into the bottom of the prepared baking pan.
  • In another bowl, combine the diced peaches, sugar, cornstarch, lemon juice, cinnamon, and vanilla. Toss gently until evenly coated.
  • Spread the peach filling evenly over the crust. Sprinkle the remaining crumb mixture over the peaches.
  • Bake for 40–45 minutes, or until the topping is golden brown and the peach filling is bubbling.
  • Allow the bars to cool completely before slicing to help the filling set properly.
  • Dust with powdered sugar if desired and serve at room temperature or slightly chilled.
