Ingredients

For the Chicken

  • 1 whole chicken, approximately 1.5–1.8 kg (3.3–4 lb), or equivalent bone-in chicken pieces
  • 3 tablespoons olive oil
  • 4–5 garlic cloves, finely minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 2 teaspoons paprika, preferably smoked or sweet
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, or to taste
  • ½ teaspoon red chili flakes, optional
  • 1 teaspoon onion powder, optional
  • 1 tablespoon chopped fresh parsley, for garnish

For Roasting

  • 1 onion, cut into wedges
  • 1 lemon, cut into wedges
  • ½ cup (120 ml) water or low-sodium chicken stock, as needed

Instructions

  • If using a whole chicken, remove any giblets and pat the skin and cavity dry with paper towels. Dry skin helps the chicken brown more effectively during roasting.
For easier cooking and serving, you can also use bone-in chicken thighs, drumsticks, or leg quarters. Avoid washing raw chicken, as splashing water can spread bacteria around the kitchen.
  • In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, paprika, oregano, salt, black pepper, and chili flakes.
For a spicier peri-peri-inspired flavor, add chopped red chilies, red wine vinegar, and cayenne pepper. Mix everything until it forms a fragrant, evenly blended marinade.
  • Rub the marinade generously over the chicken, including the legs, wings, and underside. If using a whole chicken, carefully loosen the breast skin and rub a little marinade underneath it without tearing the skin.
Place the chicken in a covered container and refrigerate for at least 1 hour. For deeper flavor, marinate for 4 hours or overnight, provided it remains refrigerated.
  • Preheat your oven to 400°F (200°C). Arrange the onion wedges and lemon pieces in a roasting pan. They add aroma and flavor to the juices collected during cooking.
  • Place the marinated chicken in the roasting pan, breast-side up if using a whole bird. Pour the water or chicken stock into the bottom of the pan, keeping it away from the top of the chicken so the skin can brown.
If using chicken pieces, arrange them in a single layer with space between them for even roasting.
  • Roast a whole chicken for approximately 50–70 minutes, depending on its size. Bone-in chicken pieces may take around 35–50 minutes.
Baste once or twice with the pan juices if desired. If the skin becomes too dark before the meat is cooked, loosely cover the chicken with foil.
  • Use a food thermometer to check the thickest part of the breast and the innermost part of the thigh, avoiding bone. Chicken should reach an internal temperature of 165°F (74°C) for food safety.
If it has not reached this temperature, continue cooking and check again after a short interval.
  • Transfer the cooked chicken to a cutting board and let it rest for 10–15 minutes before carving. Resting allows the juices to redistribute, helping the meat remain moist and flavorful.
  • If desired, spoon off excess fat from the roasting pan and place the remaining juices in a small saucepan. Simmer briefly to concentrate the flavor, adding a little stock or lemon juice if needed.
Taste and adjust the seasoning. Make sure any sauce made from raw-chicken marinade is thoroughly cooked before serving.
  • Carve the chicken or arrange the cooked pieces on a serving platter. Garnish with fresh parsley and lemon wedges.
Serve with roasted potatoes, rice, grilled vegetables, or a crisp green salad. For a spicier meal, offer extra peri-peri-style chili sauce on the side.

Notes

  • Choose fresh chicken: Fresh or properly thawed chicken works well for this recipe.
  • Dry the skin thoroughly: This helps create a more attractive golden crust.
  • Adjust the heat: Reduce the chilies for a milder family-friendly version or add more for a fiery flavor.
  • Use fresh garlic: Freshly minced garlic gives the marinade a stronger aroma than garlic powder alone.
  • Allow time to marinate: Even one hour makes a difference, while a longer refrigerated marinade develops deeper flavor.
  • Avoid overcrowding: Arrange chicken pieces in a single layer to encourage even browning.
  • Monitor the temperature: Use a food thermometer rather than relying only on the color of the skin or juices.
  • Save the pan juices: The roasted garlic, lemon, and chicken juices make a flavorful finishing sauce.
